It's possible to do it by customizing your shortcuts in Tools - Customize -
Keyboard. Look up the command "Zoom in" and "Zoom out" and associate a shortcut
with it.

The question is: should we provide this as default?

In Writer the shortcut "Ctrl +" is currently associated with the command
"Calculate".
