Elementary is massively superior to Colibre in my opinion - in Light mode. I
like it as the default - it makes it easier for user to distinguish button
functionality, as it is less abstract and uses color more than themes like
Colibre and Sifr. 

Regarding the argument for consistency of icons across platforms/DE's - we
don't even use a consistent UI toolkit, so I don't see why the icons have to be
the same; and there's the matter of agreeing with the DE's overall style. But -
if we were to choose a uniform icon set, then definitely Elementary for Light
mode.

As for Colibre vs Sifr in Dark mode... this is a bit of a tough call. Colibre
uses colors, which I like in principle over monochromaticity. But for some
icons, the color is limited to a small element and barely visible, e.g. the
Track Changes icons, so it's more of a hint or aesthetic adornment; and the
effective use of color is more tricky in Dark mode anyway.

Sifr is close to being monochromatic (it also uses gray); but - it uses thicker
lines, and better-pronounced/larger visual elements, than Colibre.
