An asterisk at the beginning of a paragraph applies a (unordered) list style likewise plus and minus (the latter an EM dash). We could use a hash for ordered lists and maybe a greater sign for Block Quotation but I see not much more. And the better solution to "quickly apply styling" would be a shortcut, which we provide hard-coded for headings but not customizable. Besides, the Atlassian Confluence example like any other wiki has the input separated from the view while text processors are supposed to be WYSIWYG. What you with the upcoming v26.2 is to paste MD text and it will be converted into styled text. See bug for this 162153.
