In the past i've tried the Windows version for some times without Java, for very simple tasks and i recall it is rather usable.
I remember this bug report where perhaps you could find useful infos:

Here you can see that Java is used also by extensions and LibreOffice includes some of them by default. You can see their names when you run a LibreOffice app without quickstart loaded. Others reports that also spellchecking could be affected by the lack of Java. Moreover, if i recall correctly, also mail merge has some connections with Java.

But since the bug report and my experience are from 3.3.0 beta and release candidate, perhaps the situations is now improved.
