Amongst other things, syntax-colouring is totally customizable. I wrote a basic Lilypond syntax-colour plist 11 years ago (cf. https://lists.gnu.org/archive/html/lilypond-user/2004-01/msg00668.html), but I have no idea if it still works; in any case, it wouldn’t be hard to fix/improve it.
