I don't understand what you tried, the following example is
equivalent to your example and uses variables.

rh= \context Staff = RH \notes {
                g \change Staff=LH f
            }

\score {
    \notes \transpose c c' {
        \context PianoStaff = PS <<
            \context Staff = RH {}
            \context Staff = LH {}
            \rh
        >>
    }
}
