it's another silly mistake (grrr!), you can edit
/usr/bin/lilypond-snapshot and put an extra back-slash in the line:
export TEXMF="{$lilydir,"`kpsexpand \$TEXMF`"}"
so it will become:
export TEXMF="{$lilydir,"`kpsexpand \\$TEXMF`"}"
I'm uploading a corrected version of the package now.
