Do you experience this generally or only with larger documents? Disabling autocomplete unfortunately doesn't turn everything off but only disables the pop-up. See https://github.com/wbsoft/frescobaldi/issues/933 which I created just a few days ago. Slow handling of large files (or files with numerous includes) is a known issue, with several ideas to approach but nobody having had the time to tackle ...
