The code you posted is not relevant. Here is how to get Arial bold.
Selecting Garamond works fine for me on my Ubuntu Linux system. The
documentation for font selection has been changed in the 2.25 beta
releases. Font selection in LilyPond is not my area of expertise so
perhaps someone else can comment further on what is happening.
