So what I do now is make the incipit a separate score, which I print above the piece, and then print the voice with the ambit in the normal way. I don't think this is the ideal solution, but on the other hand, people who haven't played much early music often get confused by having the incipit on the staff with the music they're supposed to play, so it solves that problem too.
