Hi Steve,
if LilyPond.app is installed (copied) into "/Applications/", you can
call convert-ly directly from the console:
/Applications/LilyPond.app/Contents/Resources/bin/convert-ly
or you add
/Applications/LilyPond.app/Contents/Resources/bin/
to your search PATH.

The installation of LilyPond probably does not meddle with the search
PATH so you'll probably add LilyPond's executable directory yourself.
Once
lilypond
does something useful on a command line, however, convert-ly should
likely work as well.
