A few years ago I took some classes at Upholstery on Broadway in Arlington. I stripped down an old arm chair to its skeleton and redid everything. I also did a couple of dining chair seats. And I hired the owner to reupholster a couch for me, which turned out better than new. All of this was rather expensive, but I enjoyed doing the work and learned a lot. At that time I was able to leave my chairs in the shop between classes, but I don't think you can do that now. They were also doing some how to videos. Worth checking out.
