Indeed, a good point.

There is the hop from your client to your outbound proxy.  Then from
that to the registrar of the other party.  And then back over the
signalling channel that they established.   Even if all 3 are TLS, the
plaintext still appears in the middle.

I gather people use OMEMO or OTR for SIP messaging.  I think Jitsi
Desktop does that, but I don't have any reason to think linphone does.
