Don't confuse "not listed as supported" with "it isn't going to work."  
Supported configurations are simply the ones the vendor have tested, certified, 
and that they feel comfortable with saying are supported.  Lots and lots of 
other configurations may work just fine, but won't get you any help from the 
vendor if/when things go wrong.

Linux support for SCSI over FCP is almost entirely developed and tested by IBM, 
on IBM hardware.  Certain other storage vendors, such as EMC, have made the 
effort to test their hardware as well.  In at least one case, a kernel change 
had to be made for EMC to get certain things working better.  I wouldn't depend 
on any arbitrary piece of hardware working properly without lots of testing, 
and possibly lots of help from the storage vendor.
