I suggest nasm, nasm.sf.net .  Debain probably provides a package also..

Either download the nasm documentation, which contains an instruction set, or 
view them online at http://nasm.sourceforge.net/doc/html/nasmdoc0.html .

Then, for a crash course in linux assembly, check out http://linuxassembly.org/
