If you do not set LOGUSER (it's
undefined by default), the log files are not saved to the isntall
server. Set LOGUSER in /etc/fai/fai.log and rebuild the nfsroot.

This must be what happened, because the log saving thing 'used to' work. I guess with I changed the configs to the new split-file format I lost the LOGUSER var.
