Everyone as in?

Everyone in your LAN - Put the IPs of your LAN in access.db (that is, put
something like 192.168 for the 192.168.0.0/16 netblock in access, and then
run makemap)

Everyone in the world - Don't.  Open relay

Authorized users who are traveling, and too dumb to reconfig their outlook -

If you mean sendmail is working only from the linux box and not the rest of
the LAN, take a look at the redhat linux section in
http://www.sendmail.org/faq (section 5.3.3 I think).  Or see some of my posts
yeterday to LIH.
