Use the same system, with centralized config stores and replicating configs to remote locations via rsync over ssh. Anyway, one admin should be able to monitor about 75-100 postfix systems easily, so long as you keep local configs reasonably alike. You do have a good admin, right? Use pflogsumm.pl to monitor your postfix installation. Of course, use the postfix canonical maps :). Errrr, is that POP or IMAP? I suggest using IMAP since you are using cyrus. I would recommend a setup like: Internet->MX (filter for spam)->AV gateway->Local servers->Mailbox. Your incoming MX acts like a firewall setup, so see the postfix FAQ for running postfix on a firewall. Amavisd+Filescan for the antivirus scanning. Amavisd feeds back into postfix which sends mail to the local servers via canonical maps.
