because the message that you've deleted is not deleted exactly. deleting
the message means removing it from the hard disk. in outlook also, when
you delete a message, it is not actually deleted - it is only marked for
deletion. in evolution, when yu mark a message for deletion, it gets
striked out, which yu can obviously hide, however, Trash directory lists
all those messages which are marked for deletion, and there is no point
providing a "Hide Deleted Messages" checkbox. that's why yu see all the
messages marked for deletion, and "Hide Deleted Messages" is disabled.

was not able to find any option that will delete messages individually.
might be an option in evolution 1.2 or maybe the upcoming gtk2 version.
