yes you can do all that. please read some good documentation on sendmail.
also, sendmail out-of-the box will also allow you to do all this, except
sendm mails out of the domain, for which you will have to do
dnl # DAEMON_OPTIONS(`Port=smtp,Addr=127.0.0.1, Name=MTA')dnl
in the sendmail.mc. Just search for the above line and put a dnl before it.

as far as antivirus virus is concerned, you can use any antivirus with
MailScanner - avilable with the fc2 release.

Am unable to understand what you mean by a proxy.
