Step 0: Read the docs. Read them once again.

Step 1: Get rid of other MTAs on your server. On Redhat, you can check via:

rpm -q --whatprovides smtpdaemon

Step 2: The -easiest- way to configure Courier (recommended for
first-time users) is to use its web-based configuration tool. Check
out your Apache's cgi-bin folder - there should be a file called
webadmin there. Point your browser to
http://localhost/cgi-bin/webadmin

(Note: Webadmin will work only over localhost, and over the network on
apache-ssl. If you are trying over network, then make sure you go via
https://server/cgi-bin/webadmin)
