Doesn't really matter which install you do - you need the necessary
daemons/packages installed however. Since you did a custom and installed
everything, almost all the services should be present. You will need to
configure them before you can make use of them however.
webserver - you need apache and you need to configure it to suit your needs
if you have special requirements. Otherwise you still need to add the web
content you want to display. Read the apache documentation and check out
http://www.apache.org
database server - one of the sql variants will do. mysql comes to mind. This
is not my field really so someone else will be able to offer you more help
here.
proxy server - squid was probably installed - you need to configure / tweak
it to suit your needs. Read the squid docs.
news server - innd (I think) is what you need - it should be present but
will again need to be configured.
The best thing for you to do would be check out the HOWTOs in the docs
directory on your linux distro cd. Perhaps someone else can point out the
URL to where to get the howtos on the web.
