You can do this - virtually. Take a switch that supports VLANs (like
the Cisco 2924), define a unique VLAN on every port and have a trunk
to your server (and perhaps a trunk to other switches). Use the Linux
VLAN patches and a network card that supports it. Then, you actually
have one server with hundreds of ethernet ports.
You do need to have a seperate subnet on each VLAN, unless you get
very creative with bridging (and provided that firewalling works
on bridges etc).
