Yep, they're there.    Would the '2345' be runlevels?

Yes, they do.    But then I didn't know how to get the gdm back :)   
Never mind, I just rebooted it.

Sorry, my vague wording was meant to reflect my unfamiliarity with Debian.  
There *is* a /usr/X11R6/bin/startx.

And it worked, I have a text login, and 'startx' starts X.
