I didn't know you could do that.
I just upgraded my T630 from 2.75.100.75 to 2.80.80.80 using the RHEL7 bin file downloaded from Dell's website and it is working fine so far:

racadm rollback <FQDD>

e.g. 

racadm rollback iDRAC.Embedded.1-1

It will tell you that the rollback has been initiated, then disconnect you and 
when you reconnect next time you’ll find the downgrade completed.

With racadm installed on the OS you can do it from the OS CLI as well.
