I'm (finally) setting up IMAP on my server again and will have Evolution connect all my email. You could do the same and have your Windows box also connect to the IMAP server. Just select the option to download all messages from the IMAP server so you have a local copy on the laptop and it will happily synchronise each time you check your email. If your server is connected to the net full time, you might also want to set up webmail on the server (squirrelmail) so you'll have full access to all your email archives where-ever you are whether you have your laptop with you or not.
