You could also look at DesktopBSD[1]. It uses the FreeBSD ports collection where PC-BSD created their own packaging system. Otherwise you could just use the normal FreeBSD CD's and install what you want from packages.
I need KDE, including Scribus, KMail & Konqueror, a full TeX install, and Lyx.
Yes they are all in the FreeBSD ports collection.
