Sure, that's entirely possible, and I would say a fairly common use of 
Asterisk. You will want your Asterisk box on a public IP to save you major 
issues with SIP going via two NATs.

DSL in .nz has reasonably high latency for use with VoIP but if it's a local 
server then it shouldn't be a problem.
