Configure an update source manually (with installation sources). This might have to be a source for (e.g. security) updates, as opposed to a source which installs a "product", if that makes sense. You can configure a local LAN one too if you have one; ftp://localhost/someplace works if you have set it up correctly. Also when you start online update, for all sources for which "refresh" is enabled, the repo package description is downloaded so you get to know about newly available security update packages. Obviously, for updates the "refresh" needs needs to be on, for DVDs etc you want it off.
