Internet Site means mail is received from outside the machine (and
from inside the machine).  Mail is sent directly to the MX of the
domain you are sending to.

Internet with Smarthost means mail is received from outside the
machine (and from inside the machine), but you send outgoing email to
a single MTA (probably your ISP's MTA) for forwarding on to the final
destination.

Satellite means all mail is handed to an MTA on another system
for delivery.  You probably don't want this, or apps/daemons that
want to mail to root@localhost will have trouble contacting you.

You probably want Internet with Smarthost, from your description.
