To verify whether the mail in question reached the destination mail
*server*, look in the sending Mail Transfer Agent server's logs; if it
used Sendmail the last line referencing that mail has a "stat=sent" and
maybe a reference number from the receiving machine. Other MTAs will have
their own versions of that...
Whether the message was received or not by the *human* could only
_sort_of_ be verified by checking the mail logs on the recipient's mail
server, assuming that the machine in question _keeps_ logs. (I'm told by
clients that the logging capabilities of Microsoft Exchange lead much to
be desired...)
There will be log lines to the effect that the message arived, and other
lines (perhaps in a different logfile?) to the effect that the client's
workstation/handheld/whatever had retreived said mail.
As to whether or not the human actually *read* the message, the only way
to verify _that_ is to ask them... unless they lie to you...
