I dont think there is much you can do if someone from the list uses outlook, 
has the list in their address book, and gets infected.  You could search 
attachments for the type of files that contain viri and return the messages 
asking they dont send that type of attachment to the list with an 
explaination in case they dont know they have the virus.  

Better yet you could return all email from outlook by searching for:

   X-Mailer: Microsoft Outlook Express 

in the headers.  That might be too restrictive as some people have to use 
what is offered at work.
