Allows email to [EMAIL PROTECTED] to be received by the fsmith
account, if it has Fred Smith in the full name part of the /etc/passwd

No, that shouldn't be necessary. The help file for that dialogue
reads in part:
To specify a host name, you enter the fully qualified name, like
machine1.domain.com. To specify a domain, simply enter it. This
means that any machine part of this domain will be processed in
the same way.
A quick glance at the source code suggests it really does operate that
way.

You may want to put the virtual domains you host email for in here
too?

'Legit mail' to what addresses from what addreses? To what IP
address? An example bounce might be helpful here.
