If you're looking for system administration training, you can learn almost
everything by intalling linux at home. Some topics like raid, scsi/fibre
storage, i/o drawers, tape drives, etc cannot be learnt at home. I doubt any
individual/insti would train on that either. The best way would be to learn
whatever you can from home and then try to get a job on a live prod server.

PS: Consider yourself lucky you want to learn linux. It can easily be
installed at home. There are lots of guys out there who want to learn
AIX/HP-UX which do not run on desktops. ( A second hand pseries anyone?  )
