When you boot from the CDROM and get the cdrom welcome menu with
`boot:' prompt, then type `linux26' to install using linux 2.6 kernel.

boot: linux26 <ENTER>

As for selecting packages, you can press ESC in debian-installer and
go to the menu and locate the option for selecting individual packages
for installation.
