MIDI instrument mapping, Instruments Database and Orchestras are three
different features.
About MIDI instrument mapping, the LSCP spec can be of some help:

Currently there is no user documentation about that.
There is no user documentation about the Instruments Database, too. I
hope I'll find some time soon to write something about it.
On a glance, the instruments database is like an instrument catalog
that you can create and manage by your taste, containing information
about the instruments you have on your box. Then, from the instruments
database you can more easily load instruments, map MIDI instruments,
or add instruments to orchestras. Initially the instruments database
is empty, so first you should add some instruments/directories to it -
from the Instruments Database window choose Actions/Add Instruments/.
All other actions are similar to the conventions in the file managers
- creating directories, renaming instruments/directories,
moving/copying/deleting instruments/directories, etc.
