Do you want to set this up yourself (as a learning process) or would a pre-chewed system suffice?
Many hotels to exactly this using RADIUS authentication and what not (to restrict Internet access to guests only). Or maybe it was RADIANT... something beginning with R... CentOS will have more restrictive firewall defaults; Debian might be a easier bet.
