Is there a way, or better yet, an easy way, to take another "snapshot"
for GRUB?

If that's all that's needed after changing a system's configuration,
then it seems like a tool that every admin would want to have, verses
maintaining GRUB files manually.
The easiest way is to re-install grub: (if you don't like config files)
The Puppy Linux live CD has a real easy grub install wizard on it. That
might be the easiest way to fix your boot list. It automatically adds
all the boot records and does most of the configurations for you.
