Being installed is not the same as being activated and in use. Graphics drivers are loaded in the boot process and need to be matched with the kernel. You can have multiple drivers installed, but it will use the one that matches xserver-xorg and the kernel-source. Your xserver must match the driver which can be either -nv or -nouveau. I use synaptic's search function and remove drivers completely that I do not want. Then I make sure that I have all of the parts of the one that I want. Re-boot to use it.
