I don't think there's a book there. In general, product development projects are not all that interesting as stories, which is why the existing stuff about the Lisa is dry. The Mac history is one exception to the rule, and that's probably due to Steve Jobs.
There might be something to it, thought the best stories at www.folklore.org don't include Jobs. :)
