Hi Ian; taking this discussion back to live-demo (not sure how it ended up on osgeo-discuss).
I had no problems with running GeoServer on the live dvd; as they were not read-only when it is used as a live dvd. I did go through your quickstart and was able to add new data etc... of course it is not able to last a reboot.
