REPLY I think you will find this is no longer as true as it once was. My mother was always saying how bad the traditional danish diet was. I remember being given FAT sandwiches. Slices of rye bread with pure fat spread on it as butter. Yuck! But then a lot of the traditonal foods still had a lot of fat content. Especially goose and pork. But I do love that crisp crackling on a good pork roast. The family that adopted me was old traditional from New Denmark in NB and they favoured the old fattening foods. Recipes I see in the newer danish magazines do not include such fat laden foods.
