So you are basically writing in the same file from several places?
This is bound to give that kind of problems you describe. There is no
file locking in the RollingFileAppender which means that the JVM does
not do anything to ensure that the problems you have do not happen.
Is there any particular reason why you cannot have a log file per server?
If not you can either have a centralized logger doing the writing which
all your appenders forward to, or write the file locking yourself.
