In my classes I mention debugfs but only as something that people
shouldn't touch unless they know far more about ext* file systems than
is healthy.

FWIW I've never heard of somebody running into a question on debugfs
that was more in-depth than “Which of the following four programs is a
very dangerous low-level file system manipulation tool?”.

Having said that, back in my good old AIX days I was once able to use
debugfs to rescue a FOAF's PhD thesis (which the unlucky b.*d had
somehow managed to delete, or something, not long before the submission
date) by messing up the file system enough so fsck would bring the files
back. Which wasn't too bad because afterwards as long as that guy was
around I'd never go thirsty ;^)
