The file in /tftpboot/lts, most likely named vmlinuz-2.4.x..., is the kernel your ltsp clients use to boot. dhcpd passes this filename to it's clients so that the tftp client knows what kernel to download. What's important is that the filename you specify in your dhcpd.conf is the same as the file in /tftpboot/lts/.
I'm not too familiar with the changelog of kernel's provided in each release from the ltsp team but the latest should be fine for all of your clients. On ltsp.org, there is only a link to the latest kernel but if you browse one of ltsp directory's on the sourceforge mirrors, there may be older kernel's available for download.
