I use a resolution slightly less than 1280x1024@16bpp in order to have
it fit maximized on the workstation I'm using.  If you have TightVNC
installed, you might try enabling some of the compression and quality
features and make sure that "tight" encoding is in use.  You may be
running into an issue where "raw" encoding is chosen which will be
agonizingly slow (and probably not happening since you seem to be
describing a bit more responsiveness than what would happen in "raw" mode).

For starters, you might try 'vncviewer -encodings "tight copyrect"
- -quality 6 -compresslevel 6 ...'
