Lee, Take a look at the manpage on ltsp-build-client. You'll see the option '--arch i386' will cause it to build an i386 chroot on a 64-bit server.
You'll probably need to remove the existing /opt/ltsp/i386, as it's most likely built for 64-bit cpus.
