Anyone know how to configure and enable DHCP services after installation of
the server?  I'd rather not have to go through the entire install process to
enable DHCP.

You will save yourself a huge amount of grief if you set up your LTSP server
to be your DHCP server as well.

Your DHCP server has to tell the terminals where to find the operating
system to boot off of.  Unless you have a very good (industrial) router, its
built-in DHCP server won't have the capability to do that.
