Actually, with local apps, you should be able to do all.

Printers are handled in the classic way, as JetDirect printers.

Scanners involves installing the sane backends in the chroot and running
saned from inetd (installing inetd in the chroot, as well).  That will
enable all clients to share a single client's scanner. 

CD burning can be handled with a local application, such as xcdroast.
Simply install in the chroot, make sure the users are in the correct
group to access the cdburner, and run ltsp-localapps xcdroast.  As long
as the image they are burning is in their home directory, they should be
good-to-go.  (CD burning requires access to the raw device, which is why
it could not be done in the past.  With local apps, the app has direct
access to the raw device.  NOTE:  It will still be burning over the
network, meaning it will transfer, say, 700MB from the server.  Keep
that in mind).  Sharing a single cd burner amongst the thin clients may
be trickier, but still doable if you run the cd-burn-server as a local
app on the machine with the burner.
