You are going to have to install all the software on the client, except
that one large one which you install on the server.
You will also have to install the window manager on the client. Haven't
done that , sounds like fun.
Hope you clients have at least 1GB memory.
Don't know the answer to vlc. Your solution looks good to me I did not get
it working on Open Suse.
I'd do a quick test . Install xfce4 and see if it produces a menu for the
vlc app first.
